Pumpkin Spice Muffins

It’s still warm and sunny here at the beach, but I couldn’t help but make my pumpkin spice muffins to snack on through the week!

Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free, GAPS, SCD
Ingredients
  • 3 cups blanched almond flour
  • 3 large organic eggs
  • 1 cup organic pumpkin puree'
  • ½ cup coconut oil
  • ½ cup honey
  • 1½ tsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ tsp ground ginger
  • 1 tsp sea salt
  • 1 tsp baking soda
  • ¼-1/3 cup chopped pecans
  • NOTE: I found all of my ingredients at Trader Joe's.
  • I buy raw slivered almonds and grind them into a flour with a coffee grinder.
Instructions
  1. Preheat oven to 350 degrees.
  2. Place muffin liners in muffin tins.
  3. Combine all ingredients except pecans in a medium/large bowl.
  4. Fill each paper lined tin to ¾ full.
  5. Sprinkle pecans over top of each muffin.
  6. Place muffins in oven.
  7. Bake for 22 minutes, or when muffins bounce back to the touch.

Chocolate Chia Seed Pudding

Today is my 2nd  day of the anti-candida diet.  This is my second time doing it, and it’s the most strict diet I’ve ever encountered because there is a therapeutic goal~to eradicate candida! Candida feeds on carbs and sugars, so my diet consists of protein, non-starchy vegetables, and healthy fat, such as coconut milk!  The 1st day of my therapeutic diet was (for lack of a better term) grouchy and fatigued. I slept a lot, but by the end of the day, the detoxing was subsiding and I felt great! Now, what do I eat?! Here’s one easy treat that satisfies my desire for something sweet: Chocolate Chia Seed Pudding! It’s sweetened with an herb called Stevia, which has it’s own funky taste, but at least it’s sweet, and I’m feeling SO MUCH BETTER!

Anti-Candida snack, diabetic safe, grain-free, gluten-free, soy-free, dairy-free
Ingredients
  • 1 can coconut milk (light or full fat~just make sure the ingredients contain only coconut and water)
  • ¼ cup organic chia seeds
  • 1 Tbsp cacao powder
  • 18-20 drops liquid stevia in glycerin(not alcohol)
  • ½ tsp pure vanilla powder (optional)
Instructions
  1. Place all ingredients in blender.
  2. Blend for 20 seconds.
  3. Pour into glass container or individual dessert containers.
  4. Refrigerate for at least 1 hour.

Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free
Ingredients
  • 2 cups water
  • 1 organic mint tea bag
  • 4 Tbsps. raw honey
Instructions
  1. Place tea bag in hot water and steep for 10 minutes.
  2. In the meantime, stir in honey.
  3. Set aside and let cool to room temperature.
  4. Pour tea into popsicle molds and freeze for 6 hours or overnight.

Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free
Ingredients
  • 2½ cups organic watermelon
  • ½ cup organic apple juice
Instructions
  1. Mix ingredients in blender.
  2. You may need to stop the blender and push the watermelon down with a spoon. Blend again.
  3. Pour into popsicle molds.
  4. Freeze for 6 hours or more.
