Mango Pepper Sauce

My Mango Pepper Sauce is THE BEST steak sauce I’ve ever tasted! If your garden is abounding with peppers this time of year, try my Mango Pepper Sauce. Use as a spicy sauce for fish, or add to mayonnaise to create a flavorful mayo sauce. Don’t be intimidated by making your own sauce. It’s extremely easy!

*This makes an excellent steak sauce. Paleo, Grain-Free, Gluten-Free, Soy-Free, Dairy-Free, Refined Sugar-Free, Egg-Free, Nut-Free
Ingredients
  • 8-10 Peppers of choice depending on heat preference. (I used 1 large Italian roaster pepper, 6 bajio peppers, and 1 serrano pepper for a MILD flavorful sauce)
  • 1 large onion, quartered
  • 1 bulb of garlic
  • 3 tsp sea salt
  • ⅓ cup fresh lemon juice
  • 2 cups pineapple juice
  • 2 ripe mangoes, peeled and pit removed.
Instructions
  1. *NOTE* Open all doors and windows, with VERY good ventilation while roasting hot peppers.
  2. Chop off tops of peppers. I use mild peppers, so I don't remove seeds. If you are using hot peppers, you can remove seeds.
  3. In a dry cast iron skillet, dry roast onions, garlic, and hot peppers (whole), on a stove top, until pepper skins are moderately charred.
  4. Add onion, garlic, and peppers to high speed blender or food processor.
  5. Add salt, lemon juice, pineapple juice and mangoes to blender or food processor.
  6. Blend all ingredients until smooth.
  7. Strain through a fine mesh strainer.
  8. Pour sauce into a medium size sauce pan.
  9. Simmer for 45 minutes.
  10. Pour into sterilized containers.
  11. Refrigerate when cool.
  12. *WASH YOUR HANDS THOROUGHLY AFTER HANDLING HOT PEPPERS. Avoid contact with sensitive skin and eyes after touching hot peppers. If you accidentally touch a sensitive area, or your eyes, flush with cool water and/or use an available oil such as jojoba, grapeseed, coconut, or any other oil to rub on skin and dilute the heat of the pepper.

Kid’s Choice Beef Stew

My Kid’s Choice Beef Stew is simple in texture and rich in flavor. I cut the carrots and potatoes into very small pieces. This way, it’s easier to eat and much more appealing to little ones.

Grain-free, gluten-free, dairy-free, soy-free, refined sugar-free, egg-free, nut-free
Ingredients
  • 2 1⁄2 pounds grass-fed beef, cut in 1-inch cubes
  • 2 Tbsp coconut oil or avocado oil
  • 6 cups gluten-free beef broth
  • 1 Tbsp sea salt
  • 1⁄2 tsp black pepper
  • 4 cups peeled, cubed gold potatoes (peeled and cubed into small pieces)
  • *1 cup caramelized carrots *see recipe below
  • 1 bay leaf
  • 1⁄2 cup spring water
  • 4 Tbsp arrowroot powder
Instructions
  1. In a large soup kettle or soup pan, brown beef in oil.
  2. Add broth, salt, and pepper.
  3. Heat to a boil.
  4. Cover and simmer 2 1⁄2 hours, until beef is almost tender.
  5. Stir in cubed potatoes and bay leaf.
  6. Cover and simmer for 30 minutes.
  7. *In a medium size cast iron skillet, add 1 Tbsp of coconut oil, and 1 cup of finely sliced, or chopped carrots.
  8. Cook and stir over medium heat until carrots are bright and tender.
  9. Set aside.
  10. Mix ½ cup spring water and arrowroot powder together, then gradually stir into stew.
  11. Add caramelized carrots to the stew.
  12. Heat to a boil and stir 5 minutes more to thicken.
  13. Stew tastes even better the next day after all flavors have had a chance to merge.
  14. NOTE: A finely chopped onion may be added in the beginning to broth; however, many kids don't like the texture of onion.

Coconut Milk Chai Latte

Dairy-Free Caffeine-Free, Refined Sugar-Free, Soy-Free, Grain-Free, Gluten-Free The optional collagen promotes healthy joints, bones, skin, and cartilage.
Ingredients
  • 1 cup spring water
  • 2 Chai Rooibos tea bags by Yogi
  • 14 oz can light coconut milk, or 14 oz homemade coconut milk
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • 2 Tbsp honey
  • *optional: 2 Tbsp Great Lakes Collagen Hydrolysate (collagen joint care) Can be found on Amazon.com
Instructions
  1. In a sauce pan, boil 1 cup of spring water.
  2. Turn off heat and place two Chai Rooibos tea bags in water.
  3. Steep 4-6 minutes.
  4. Pour coconut milk into high speed blender.
  5. Add cinnamon and nutmeg to coconut milk.
  6. Remove tea bags from water and pour tea into blender with coconut milk.
  7. Add 2 Tbsp honey.
  8. Blend on high speed.
  9. *Optional: Add Collagen Hydrolysate and blend.(This is a tasteless non-congealing precursor of gelatin, and contains 20 amino acids for joint care, bones, skin, and cartilage). Can be found on Amazon.com
  10. Top with a sprinkle of ground cinnamon if desired.
