Mixed Fruit Bowl with Cacao Nibs

This is the perfect treat on a hot summer day! Cacao nibs are bitter on their own, but the perfect combination with something sweet! Cacao is the raw version of cocoa, and is known as a superfood that can help alleviate stress, improve heart function, and help reduce cataracts. It’s also known to help alleviate depression. After all, who doesn’t feel better with chocolate?!

Raw, Paleo, Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free
Ingredients
  • 2 - 2½ cups frozen organic mixed fruit (Costco has a great "Day Break Blend" of peaches, mango, pineapple & strawberry).
  • 1 whole organic banana
  • 1 sliced organic banana
  • 1 - 1½ cups organic apple juice
  • Organic cacao nibs
Instructions
  1. Place mixed frozen fruit, 1 whole banana, and apple juice in a high speed blender.
  2. Blend until smooth.
  3. Scoop into dessert bowls.
  4. Top with sliced bananas and cacao nibs.
  5. Serve immediately.

Poached egg with avo and fermented veggies

This is my super simple breakfast of champions!  Fermented vegetables are naturally full of good bacteria (probiotics) which helps keep your immune system remain strong and balanced. The combination of the warm poached egg on a bed of cold sauerkraut and avocado tastes so good, and gives me a great sense of balance and energy in the morning. I think you might like it too!

Paleo, Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free
Ingredients
  • 1 or 2 organic eggs
  • organic sauerkraut or homemade fermented vegetables
  • 1 organic avocado, peeled and sliced
  • sea salt
  • black pepper
  • paprika (optional)
Instructions
  1. Poach egg in a handy dandy egg poacher (egg poacher tray can be found on Amazon or Bed Bath and Beyond).
  2. While egg is poaching, scoop a heaping tablespoon of fermented vegetables (sauerkraut) into a bowl.
  3. Top fermented vegetables with sliced avocado.
  4. Top avocado and sauerkraut with poached egg.
  5. Sprinkle with salt, pepper, and paprika.

Dairy-Free, Gluten-Free, Soy-Free, Refined Sugar-Free
Ingredients
  • 14 oz can whole or light coconut milk*
  • 1 Tbsp cacao powder
  • 1 frozen organic banana
  • 2 heaping Tbsp cashew butter or almond butter
  • 6 dates, pitted
  • 1 tsp raw honey
  • 6 ice-cubes
  • ¼ tsp pure vanilla powder
  • 1 tsp maca powder, optional
Instructions
  1. Place all ingredients in a high speed blender.
  2. Blend until smooth.
  3. Pour into your fanciest glass.
  4. *NOTE: Use coconut milk that has nothing else added; simply coconut and water.

Spaghetti Squash & Walnut Pesto Sauce

This dish is one of my all time favorite meals. I feel so energized after eating my Spaghetti Squash with Walnut Pesto Sauce!  Basil is naturally full of vitamins A, C and K, manganese, copper, calcium, iron, folate, and flavonoids which protect the body at a cellular level! It’s anti-inflammatory and naturally Paleo and gluten-free!

Spaghetti Squash & Walnut Pesto Sauce

Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free, Anti-inflammatory. Rich in Vitamins A, C, K, manganese, copper, calcium, iron, folate and magnesium.
Ingredients
  • 1 organic spaghetti squash
  • 4 oz package Trader Joe's fresh organic basil, de-stemmed (or) 1 TIGHTLY packed cup of organic basil leaves
  • ½ cup walnuts
  • ½ cup organic olive oil
  • ½ cup organic chicken broth (home-made or gluten-free)
  • 2 Tbsp fresh squeezed organic lemon juice
  • 1 tsp pink salt or sea salt
  • 2 cloves fresh organic garlic, peeled
Instructions
  1. Heat oven to 350 degrees.
  2. With a sharp knife, slice ends off of spaghetti squash
  3. Slice in half lengthwise. It may be easier to slice one side and then the other, rather than both sides at once.
  4. Scoop out the seeds and discard, or save for the garden.
  5. Place flat side down on a cookie sheet
  6. Bake 45 minutes to 1 hour. It's done when a fork can puncture the skin easily.
  7. Remove from oven and set aside to cool.
  8. SAUCE:
  9. In a high speed blender add all other ingredients except spaghetti squash.
  10. Blend until smooth.
  11. When spaghetti squash is cool, scoop "spaghetti" into bowls.
  12. Top with sauce.
  13. Garnish with additional walnuts or sliced cherry tomato.
