Paleo Pizza Meatballs

Paleo Pizza Meatballs are great for packing in a lunchbox. 🙂 

Just make a batch and keep refrigerated until needed.

Serves: 30 meatballs
 
Paleo, gluten-free, grain-free, soy-free, egg-free, (cow)dairy-free, refined sugar-free, egg-free
Ingredients
  • 1½ lbs ground turkey or grassfed beef
  • ½ medium onion, finely diced
  • 2 tsps dried oregano
  • 1 tsp sea salt
  • ½ tsp granulated garlic (or garlic powder)
  • mozzarella goat cheese, sliced into 1'' x 1" squares, ¼" thick
  • organic pizza sauce with no additives or preservatives(Cadia organic pizza sauce is my choice)
Instructions
  1. Set broiler on high.
  2. In a medium size bowl, mix together (with your hands) turkey or beef, onion, oregano, and salt.
  3. Do not over work the meat mixture, or it will become too chewy. Mix just until all ingredients are combined.
  4. Have a medium size casserole dish nearby.
  5. Roll meat mixture into balls the size of quarters or silver dollars.
  6. Place each meat ball into casserole dish.
  7. Once all meatballs are finished rolling, place in broiler.
  8. Broil for 7-9 minutes, until slightly browned on top.
  9. Once tops are browned, remove casserole dish and carefully roll each meat ball over with a fork.
  10. Broil for another 4 minutes.
  11. Remove casserole dish and top each meatball with a 1" square of goat cheese.
  12. Broil for 3 more minutes, just until cheese is slightly melted.
  13. Allow to cool.
  14. Serve with pizza sauce for dipping.
  15. NOTE: Meatballs and pizza sauce are great for packing in a lunchbox!
  16. Makes 28-30 mini meatballs

Dairy-Free Coffee Creme

My dairy-free coffee creme is so simple and delicious, you’ll be able to whip it up easily in no time at all.  When I make fresh brewed coffee, I serve it with my coffee cream and coconut sugar, which is also full of nutrients! Go ahead, honey, it’s dairy-free! 🙂

*Always be sure and buy organic coffee beans! Coffee beans are a crop that are heavily sprayed with glyphosates when not organic.

Super Simple Dairy-Free Coffee Creme

Paleo, grain-free, gluten-free, dairy-free, soy-free, refined sugar-free, egg-free
Ingredients
  • ½ cup cashews
  • 1 cup spring water
  • ½ tsp vanilla bean powder
  • 4 Tbsp grade B maple syrup
Instructions
  1. Place all ingredients in a high speed blender.
  2. Blend until smooth.
  3. NOTE: I like to use cashews that have been soaked in water for 4 hours and then rinsed; however, dry cashews will also work.

Summer’s Paleo Granola

Not only does this granola taste amazing, your entire house with smell amazing while it bakes. It has a light and fresh texture, with a rich cinnamon & vanilla flavor mixed with the sweetness of strawberries and banana. Go ahead, honey. It’s gluten-free! 🙂

*Trader Joe’s has the best selection and prices on nuts and seeds.

Serves: 9-10 cups
 
Paleo, grain-free, gluten-free, soy-free, dairy-free, refined sugar-free, egg-free
Ingredients
  • 1½ cups sliced almonds
  • 1 cup shredded coconut
  • 1½ cups pecans
  • 1 cup pumpkin seeds
  • ¾ cup grade B maple syrup
  • ¼ cup coconut oil
  • ¾ tsp cinnamon
  • ½ tsp vanilla bean powder
  • ½ tsp sea salt
  • 1 cup organic raisins
  • 1 Trader Joe's bag freeze dried strawberries (unsweetened & unsulfured)
  • 1 Trader Joe's bag freeze dried banana slices (unsweetened)
  • NOTE: Trader Joe's has the best selection and prices on nuts and seeds.
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine sliced almonds, shredded coconut, pecans, and pumpkin seeds.
  3. In a small sauce pan, combine maple syrup, coconut oil, cinnamon, vanilla, and sea salt.
  4. Heat sauce until hot, but NOT boiling.
  5. Pour sauce over nut mixture and stir to combine.
  6. Grease a large cookie sheet with a thin layer of coconut oil.
  7. Spread granola mixture over cookie sheet.
  8. Bake for 20-25 minutes.
  9. Stir and spread granola 1-2 times while baking to prevent burning. (I use a spatula to turn granola over while baking)
  10. Once baked, scoop granola into large bowl.
  11. Add raisins, dried strawberries, and dried banana slices.
  12. Stir to combine.
  13. Let cool, and store in an air tight container.

My Kid’s Choice Beef Stew is simple in texture and rich in flavor. I cut the carrots and potatoes into very small pieces. This way, it’s easier to eat and much more appealing to little ones.

Grain-free, gluten-free, dairy-free, soy-free, refined sugar-free, egg-free, nut-free
Ingredients
  • 2 1⁄2 pounds grass-fed beef, cut in 1-inch cubes
  • 2 Tbsp coconut oil or avocado oil
  • 6 cups gluten-free beef broth
  • 1 Tbsp sea salt
  • 1⁄2 tsp black pepper
  • 4 cups peeled, cubed gold potatoes (peeled and cubed into small pieces)
  • *1 cup caramelized carrots *see recipe below
  • 1 bay leaf
  • 1⁄2 cup spring water
  • 4 Tbsp arrowroot powder
Instructions
  1. In a large soup kettle or soup pan, brown beef in oil.
  2. Add broth, salt, and pepper.
  3. Heat to a boil.
  4. Cover and simmer 2 1⁄2 hours, until beef is almost tender.
  5. Stir in cubed potatoes and bay leaf.
  6. Cover and simmer for 30 minutes.
  7. *In a medium size cast iron skillet, add 1 Tbsp of coconut oil, and 1 cup of finely sliced, or chopped carrots.
  8. Cook and stir over medium heat until carrots are bright and tender.
  9. Set aside.
  10. Mix ½ cup spring water and arrowroot powder together, then gradually stir into stew.
  11. Add caramelized carrots to the stew.
  12. Heat to a boil and stir 5 minutes more to thicken.
  13. Stew tastes even better the next day after all flavors have had a chance to merge.
  14. NOTE: A finely chopped onion may be added in the beginning to broth; however, many kids don't like the texture of onion.
