Sweet Veggie Juice

This is how we get our multi-vitamins! This is my son’s favorite juice. It’s loaded with Vitamins A, B, C, D, K, beta-carotene,  folate, calcium, magnesium, potassium, phosphorous, molybdenum, manganese, copper, and zinc. This juice is loaded with anti-oxidants, helps purify the blood, reduces blood pressure, supports and cleanses the liver, it’s beneficial in treating gout, it’s anti-inflammatory, and helps prevent cancer because it fills your cells with delicious nutrients!

Bonus tip: If your urine turns pink after drinking beet juice, it’s a sign of low stomach acid. Stomach acid is beneficial in breaking down nutrients, especially protein!

anti-inflammatory, anti-oxidants, purifies the blood, reduces blood pressure, supports the liver, beneficial in treating gout, helps prevent cancer, aids in weight loss, anti-aging
Ingredients
  • 2 small organic beets
  • 5 stalks organic celery
  • 2-3 small organic cucumbers
  • 6 oz bag of organic spinach (or 3 handfuls of spinach)
  • 6 organic carrots
  • 2 organic apples
Instructions
  1. With a juicer, slowly press each ingredient until fully juiced.
  2. Pour juice into glass containers. Cap with a top if you aren't drinking it right away.
  3. Refrigerate and drink within 3 days.
  4. Best served chilled.

Spaghetti Squash & Walnut Pesto Sauce

This dish is one of my all time favorite meals. I feel so energized after eating my Spaghetti Squash with Walnut Pesto Sauce!  Basil is naturally full of vitamins A, C and K, manganese, copper, calcium, iron, folate, and flavonoids which protect the body at a cellular level! It’s anti-inflammatory and naturally Paleo and gluten-free!

Spaghetti Squash & Walnut Pesto Sauce

Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free, Anti-inflammatory. Rich in Vitamins A, C, K, manganese, copper, calcium, iron, folate and magnesium.
Ingredients
  • 1 organic spaghetti squash
  • 4 oz package Trader Joe's fresh organic basil, de-stemmed (or) 1 TIGHTLY packed cup of organic basil leaves
  • ½ cup walnuts
  • ½ cup organic olive oil
  • ½ cup organic chicken broth (home-made or gluten-free)
  • 2 Tbsp fresh squeezed organic lemon juice
  • 1 tsp pink salt or sea salt
  • 2 cloves fresh organic garlic, peeled
Instructions
  1. Heat oven to 350 degrees.
  2. With a sharp knife, slice ends off of spaghetti squash
  3. Slice in half lengthwise. It may be easier to slice one side and then the other, rather than both sides at once.
  4. Scoop out the seeds and discard, or save for the garden.
  5. Place flat side down on a cookie sheet
  6. Bake 45 minutes to 1 hour. It's done when a fork can puncture the skin easily.
  7. Remove from oven and set aside to cool.
  8. SAUCE:
  9. In a high speed blender add all other ingredients except spaghetti squash.
  10. Blend until smooth.
  11. When spaghetti squash is cool, scoop "spaghetti" into bowls.
  12. Top with sauce.
  13. Garnish with additional walnuts or sliced cherry tomato.

Beet Chia Juice

There’s a great juice bar down the street in our little beach town. One of my favorite juices is the Beet Chia. This is my recreation of it. Remember, there are no mistakes when making your own juice. Tweak the flavors to what taste best to you. Your body knows what it needs. Because this is such a great cleanser of the liver, kidneys, and gallbladder, start with a small amount and work your way up to drinking more as your body tolerates it. Here is my version of my favorite Beet Chia Juice.

*Note: Fresh Juice can be stored for up to 3 days in the refrigerator.

Beet Chia Juice

Anti-Aging, hydrating, great cleanser of the liver, kidneys, and gallbladder, stimulate the activity of the lymph system, rich in omega 3's, anti-inflammatory.
Ingredients
  • 4-5 small organic beets
  • 3 organic apples
  • ½ organic grapefruit, peeled
  • ½ organic lemon, peeled
  • 1 inch ginger root
  • 2 Tbsp chia seeds
  • 2 16 oz glass jars with lids.
Instructions
  1. Slowly press one beet at a time through juicer into an appropriate size glass container.
  2. Slowly press apples through juicer, one at a time.
  3. *Doing this slowly keeps the juicer from getting bogged down or stuck.
  4. Press peeled grapefruit and peeled lemon through juicer.
  5. Press 1 inch of ginger root.
  6. Using a spoon, stir juice to blend flavors.
  7. In each 16 oz glass jar, add 1 Tbsp of chia seeds, then fill jar with juice.
  8. Cover with lids.
  9. Place in refrigerator over night, or 6-8 hours. (The chia seeds will expand and soften).
  10. Shake jar to blend chia seeds before drinking.
  11. Fresh Juice can be stored for up to 3 days in the refrigerator.
