Paleo Pizza Meatballs

Paleo Pizza Meatballs are great for packing in a lunchbox. 🙂 

Just make a batch and keep refrigerated until needed.

Serves: 30 meatballs
 
Paleo, gluten-free, grain-free, soy-free, egg-free, (cow)dairy-free, refined sugar-free, egg-free
Ingredients
  • 1½ lbs ground turkey or grassfed beef
  • ½ medium onion, finely diced
  • 2 tsps dried oregano
  • 1 tsp sea salt
  • ½ tsp granulated garlic (or garlic powder)
  • mozzarella goat cheese, sliced into 1'' x 1" squares, ¼" thick
  • organic pizza sauce with no additives or preservatives(Cadia organic pizza sauce is my choice)
Instructions
  1. Set broiler on high.
  2. In a medium size bowl, mix together (with your hands) turkey or beef, onion, oregano, and salt.
  3. Do not over work the meat mixture, or it will become too chewy. Mix just until all ingredients are combined.
  4. Have a medium size casserole dish nearby.
  5. Roll meat mixture into balls the size of quarters or silver dollars.
  6. Place each meat ball into casserole dish.
  7. Once all meatballs are finished rolling, place in broiler.
  8. Broil for 7-9 minutes, until slightly browned on top.
  9. Once tops are browned, remove casserole dish and carefully roll each meat ball over with a fork.
  10. Broil for another 4 minutes.
  11. Remove casserole dish and top each meatball with a 1" square of goat cheese.
  12. Broil for 3 more minutes, just until cheese is slightly melted.
  13. Allow to cool.
  14. Serve with pizza sauce for dipping.
  15. NOTE: Meatballs and pizza sauce are great for packing in a lunchbox!
  16. Makes 28-30 mini meatballs

Banana Nut Muffins

I present to you my simple grain-free banana nut muffins! They’re simple to make and easy to grab-and-go!

This is an advanced SCdiet/GAPS recipe. Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free
Ingredients
  • 3 cups blanched almond flour*
  • 3 eggs
  • ⅓ cup coconut oil
  • ½ cup honey
  • 2 ripe organic bananas, mashed
  • 1 tsp. baking soda
  • ½ tsp. sea salt
  • **optional: ¼ cup chopped walnuts for topping.
Instructions
  1. Preheat oven to 350 degrees.
  2. In a medium size mixing bowl, combine all ingredients except walnuts.
  3. Line muffin tins with paper liners.
  4. Fill paper liners to ⅔ full.
  5. **Optional: sprinkle with chopped walnuts.
  6. Bake for 18-20 minutes, or until muffin springs back to the touch.
  7. NOTE: Muffins are just about finished baking when you begin to smell them.
  8. *If you can’t find almond flour in your area, you can buy blanched slivered almonds at Trader Joe’s, and grind them in a coffee grinder. Two bags of Trader Joe’s blanched slivered almonds yield approximately 5 cups of flour.

Apple Cinnamon Mini-Muffins

These bite-size little nuggets are perfect for little hands. They’re grain-free, gluten-free, dairy-free, soy-free & refined sugar-free.

Advanced SCdiet/GAPS recipe, Grain-Free, Gluten-Free, Dairy-Free, Soy-Free, Refined Sugar-Free
Ingredients
  • ¼ cup coconut flour
  • ¼ cup coconut oil
  • ¼ cup raw honey
  • 3 eggs
  • ¼ tsp salt
  • ¼ tsp baking soda
  • 1 tsp cinnamon
  • ½ cup organic green apple, peeled and diced
Instructions
  1. Preheat oven to 350 degrees.
  2. In mixing bowl, blend together coconut flour, salt, baking soda, and cinnamon.
  3. In a separate bowl, blend together eggs, grapeseed oil, honey, and diced green apple.
  4. Combine wet ingredients with dry ingredients. Stir in the love.
  5. Fill paper lined mini-muffin tins to ¾ full.
  6. Bake for 15 minutes or until muffins springs back to the touch.
  7. Cool before serving. Otherwise, the muffins tend to stick to paper liners when warm.
  8. Makes 24 mini-muffins.

Dairy-Free Ranch Dip

Whether you like to skinny dip or chunky dunk, this one is always a hit in my kitchen. We dip anything from vegetables to mini-meatballs. My son likes to use it as a creamy side sauce with his home-made hash browns. This dip is dairy-free, gluten-free, soy-free, & refined sugar-free.

Dairy-Free, Gluten-Free, Soy-Free, Refined Sugar-Free, Raw
Ingredients
  • ½ cup Fermented Mayonnaise (see my simple mayonnaise recipe)
  • 2 Tbsp unflavored almond milk or coconut milk (optional)*
  • 1 tsp raw honey
  • ½ tsp apple cider vinegar (or) sauerkraut juice
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ⅛ tsp paprika
  • ½ tsp. chopped fresh dill, or ¼ tsp dried dill
  • ½ tsp chopped, fresh parsley
Instructions
  1. Combine all ingredients in a small bowl.
  2. *If you prefer a thicker dip, omit almond milk or coconut milk.
  3. Chill in the refrigerator for 1 to 2 hours before serving.
