There’s a great juice bar down the street in our little beach town. One of my favorite juices is the Beet Chia. This is my recreation of it. Remember, there are no mistakes when making your own juice. Tweak the flavors to what taste best to you. Your body knows what it needs. Because this is such a great cleanser of the liver, kidneys, and gallbladder, start with a small amount and work your way up to drinking more as your body tolerates it. Here is my version of my favorite Beet Chia Juice.
*Note: Fresh Juice can be stored for up to 3 days in the refrigerator.
Beet Chia Juice

Serves: 4 cups
Anti-Aging, hydrating, great cleanser of the liver, kidneys, and gallbladder, stimulate the activity of the lymph system, rich in omega 3's, anti-inflammatory.
Ingredients
- 4-5 small organic beets
- 3 organic apples
- ½ organic grapefruit, peeled
- ½ organic lemon, peeled
- 1 inch ginger root
- 2 Tbsp chia seeds
- 2 16 oz glass jars with lids.
Instructions
- Slowly press one beet at a time through juicer into an appropriate size glass container.
- Slowly press apples through juicer, one at a time.
- *Doing this slowly keeps the juicer from getting bogged down or stuck.
- Press peeled grapefruit and peeled lemon through juicer.
- Press 1 inch of ginger root.
- Using a spoon, stir juice to blend flavors.
- In each 16 oz glass jar, add 1 Tbsp of chia seeds, then fill jar with juice.
- Cover with lids.
- Place in refrigerator over night, or 6-8 hours. (The chia seeds will expand and soften).
- Shake jar to blend chia seeds before drinking.
- Fresh Juice can be stored for up to 3 days in the refrigerator.
